Try this simple recipe for Sweet Potato Mash that I threw together today. I used dried Rosemary & Thyme. I like to experiment with new ideas, so maybe next time I’ll use Basil & Thyme. Or something else!
2 sweet potatoes
1/2 teaspoon of dried Rosemary
1/2 teaspoon of dried Thyme
Butter (as much as you like according to personal preference)
1 Garlic clove, (minced)
Peel the Sweet Potatoes and cover with water in a large pot. Bring to the boil and then simmer for 15-20 minutes.
Strain any excess water and then put the potatoes in a bowl. Add the butter, garlic and herbs and stir in together.
Transfer to your plate and enjoy!!!
I personally often don’t stick to precise measures of herbs or spices when I am cooking and often add more.
Preparation time: 5 minutes
Cooking time: 15-20 minutes
